Sweet Potatoes with Maple-Pecan Sauce
Yield: 4 servings
Ingredients:
- 2 pounds of sweet potatoes
- 4 tablespoons of unsalted butter
- 1/2 teaspoon salt
- For the maple pecan sauce:
- 1/2 cup maple syrup
- 1/2 cup chopped pecans
Directions:
- Preheat oven to 425° F.
- Peel and slice the sweet potatoes into 1" thick slices.
- Melt the butter and add to potatoes.
- Salt.
- Toss to coat, and spread in pan in a single layer, not touching.
- Roast for 40 minutes, turning.
Maple Pecan Sauce:
- Bring the maple syrup to a boil in a small sauce pan.
- Add the pecans.
- Wait for the sauce to come back to a boil, cook for 1 minute.
- Pour the sauce over the sweet potatoes and serve.
